Here at New Mexican Connection, we are always seeking out the best New Mexico products. We are excited to now offer the best Posole ever! From Casados Farms of Ohkay Owingeh, New Mexico.
Farmer Casados’s Posole is made in the old way. They grow their own corn for the Posole. In short, the corn is boiled with lime the outer skin/husk is removed and then the corn is dried in a labor-intensive process. It is turned numerous times, more during rain. It is monitored and cared for almost 24 hours a day during the delicate drying process. The corn, now Posole is hand cleaned. This process is over 100 years old and we are happy to say 100% pure New Mexico all the way!!
Posole is a traditional New Mexican soup made with corn, meat, and a few other ingredients like onion, garlic, Chiles, cilantro… The recipe varies by region, but the basics of corn and meat are what make it Posole. Posole is usually made with pork and is thick and chunky, so it is often referred to as a stew.
