Baked Taco Pie

The classic taste of a taco in a pie! It has all the ingredients of a taco but just in a different form. Add green chiles and you have got the best tasting taco pie ever!

Instructions:

  • 1 lb. extra-lean ground beef
  • 1/2 cup of our Green Chile’s (thawed, seeded, peeled, diced)
  • 1 onion, chopped
  • 1 Tbsp. chili powder
  • 1 1/2 cups diced tomatoes
  • 1 pkg. (10 oz.) frozen corn, thawed, drained
  • 6 whole wheat tortillas (6 inch)
  • 1 cup Finely Shredded Cheese
  • 1/4 cup Sour cream

Directions:

  1. Heat oven to 375ºF.
  2. Brown meat with onions and chili powder in large skillet on medium-high heat.
  3. Add tomatoes and corn and Green chiles.
  4. Cook 5 minutes. Stirring occasionally
  5. Spoon 1 cup meat mixture into 2-qt. round casserole; cover with 3 tortillas, overlapping if necessary to fit in dish.
  6. Top with 2 cups of the remaining meat mixture and 1/2 cup cheese.
  7. Cover with remaining tortillas and remaining meat mixture; cover.
  8. Bake 25 to 30 min.
  9. Top with remaining cheese.
  10. Bake, uncovered, 5 min.
  11. Cut into wedges.
  12. Serve topped with sour cream.
