Ingredients
- 1 (3 to 4 pound) beef chuck roast
- 1 1/2 teaspoons salt
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 onion, sliced
- 4 fresh New Mexican Connection chile peppers, roughly chopped
Instructions
- Place the chuck roast in the bottom of a large slow cooker.
- Season with salt, cumin, and chili powder.
- Scatter onion slices and chile peppers over the top.
- Cook on low for 8 hours.
- Go wild with how you serve it. Plain, in burritos, quesadillas, tacos, enchiladas or whatever else you can think of
