Roasted & Frozen Hatch Chile
Flame-roasted Hatch green chile, frozen at the peak of the season.
The chile in this collection is grown in the Hatch Valley and roasted over an open flame before it is frozen. That is where the smoke comes from, and it is the part you cannot get from a can.
Whole or chopped, it goes into stews, eggs, burgers, mac and cheese, a pot of beans. Freezing does not change the chile. It stops the clock.
How it ships
Frozen orders leave Monday through Wednesday only, packed in an insulated box with gel packs and sent UPS 2-Day Air. Shipping early in the week is deliberate, it keeps your box out of a depot over the weekend. Because it has to arrive frozen, we ship only where UPS can reach in two days, and we cannot deliver frozen chile to PO boxes or outside the United States.

How do you keep it from thawing in transit?
Insulated packaging, gel packs and UPS 2-Day Air, shipped Monday through Wednesday so nothing sits over a weekend.
Can I refreeze green chile after thawing it?
Yes. Thaw a bag, use what you need, put the rest back. The flavor and texture hold up through several freeze and thaw cycles.
What if it arrives soft?
Cold and firm is fine, use it or refreeze it. If a box arrives at room temperature and soft, do not eat it. Email us the same day with a photo.
Do you ship frozen chile internationally?
No. Frozen chile ships inside the United States only, to addresses UPS can reach in two days. Our shelf-stable chile, the freeze-dried and the sun-dried pods, travels much further.
