Every chile in this collection comes from one farm. Snake Ranch Farms sits along the Rio Grande in Lemitar, New Mexico, about 90 miles north of Hatch, and the Sichler family has been farming that ground since 1872.
They came over from Germany in 1868 and bought the land four years later. Six generations later they are still on it, and in 2015 the New Mexico State Fair named them Farm Family of the Year.
People ask why we don't call this Hatch chile. Because it isn't. Lemitar is its own growing region with its own soil and its own season, and we would rather tell you exactly where your chile came from than borrow a name that sells better. We have been buying from Snake Ranch since 1995, and they send their own customers to us for shipping.
Roasted and frozen at peak season, then shipped Monday through Wednesday on UPS 2-Day Air so it arrives cold.
